With the changing of the seasons comes a change in Chef Jean Pierre Gozard’s menu. From Boeuf Bourguignon in the winter to Ratatouille in the fall, and colorful fruit and vegetable-based dishes in the spring and summer, Le Troquet incorporates the freshest ingredients of the season to invigorate your senses. With Chef Jean Pierre’s dishes, the seasons will come alive!
You can always count on Chef Jean Pierre to deliver inspiring French dishes that incorporate only the freshest, seasonal ingredients. Le Troquet is located in the heart of Albuquerque, New Mexico, and uses the locale to its fullest advantage. By purchasing local, home-grown herbs, cheeses, vegetables, and meat, Chef Jean Pierre adds a touch of New Mexican flare to his traditional French cuisine.
At Le Troquet, you will also find esoteric French cuisine which also uses the freshest ingredients available. Some of these dishes include authentic French ingredients such as truffles (the best of which are only available during the late autumn and winter months), foie gras, and saffron. The inclusion of these ingredients complements the French experience felt in our bistro.
In addition to seasonal dishes, Chef Jean Pierre also accepts requests for special dishes from his customers. If, when you make your reservation, you would like a unique dish prepared for you and your party, Chef Jean Pierre will gladly attempt to accommodate your request as long as fresh ingredients are available. We only ask that you give at least 24 hour notice of your request.
One visit to Le Troquet will never be enough to experience the impact of the changing seasons on Chef Jean Pierre’s French cuisine. By combining fresh meat and seafood with locally grown seasonal herbs, his menu will keep you coming back to taste his newest creations every season.
